Scalloped Taters & Bacon Wrapped Chicken Legs

This is a recipe for scalloped taters and bacon wrapped chicken wings just add some fresh or frozen veggies and you have a complete meal.
Ingredients
  • Scalloped Taters
  • You gotta cook this stuff first
  • 1Tbsp Butter the real stuff none of that fake crap
  • 1tsp Olive Oil
  • 3 to 6 Garlic cloves depending on size and taste
  • about 6 med white mushrooms sliced thin
  • 150grm bacon chopped into bits
  • ¼ tsp Thyme
  • Mix these next items together in a large measure cup or mixing bowl
  • 1 can 370ml Evaporated milk
  • 1 and ½ cups chicken broth the good stuff (not low anything)
  • 3Tbsp flour
  • ½tsp mustard
  • ¼tsp salt
  • ¼tsp pepper
  • Shred this stuff into a large bowl
  • ¾ cup shredded cheese (make is a mix of old cheddar and mozza better melting)
  • ¼ cup Freshly grated Parmesan cheese ( can be pricey but worth it)
  • Slice these bad boys thin and place in a bowl of cold water
  • 4 to 6 potatoes depending on size
  • Bacon Wrapped Chicken Legs
  • 2 to 3 legs per person thawed
  • one bacon slice for each leg
  • Mix this stuff together in a bowl
  • Your favourite BBQ sauce 1 bottle
  • 2Tbsp Mustard
  • ¼ cup Katsup
  • 2Tbsp Real Maple Syrup (the good stuff from Canada)
Instructions
  1. Alrighty then what you need to do is pour a glass of beer or a glass of wine. You may need this before you are done.
  2. Now that the important stuff is out of the way you need to start cooking.
  3. First things first prepare all your ingredients by chopping dicing ect and mixing, hey you might even want to read the whole recipe before beginning.
  4. Now get out that big pot you usually use for cooking pasta this is so much easier in a large pot.
  5. Now heat that thing up I mean get it really hot (as one of the secrets in good cooking is proper heating of you posts and pans before starting.)
  6. Toss in the butter and olive oil (for more flavour use a flavoured olive oil such as truffle or red-pepper) melt the butter down.
  7. Now throw in the chopped bacon and let it sizzle a bit and just as it is starting to brown you need to..
  8. Add the chopped onions to the mix and cook them until they soften up and start to clear.
  9. Add the chopped garlic

  11. Now cook this whole mess up for about 5 to 8 min on medium to med high heat. What your going for here is to cook out as much water as possible maybe get a slight browning, because your going to be adding that water back in new flavours. Now once this is done you need to next..
  12. Add in the Evaporated milk and broth mix and bring to a boil keeping it well mixed, once there turn down heat and simmer a couple minutes to let it thicken a bit.
  13. Now remove it from the heat and stir in all that shredded cheese until it is melted. Set this stuff to the side.
  14. Drain your potatoes and get out the casserole dish or in my case I use a glass lasagna pan. It works perfectly. Now lay down ⅓ of the potatoes and then scoop about ⅓ the sauce over them and repeat this step twice more.
  15. At this point since I am a cheese fan and love my super addictive cheese I have an additional ½ cup of shredded cheese I put on top your option here.
  16. Now you need to cover the whole thing in Aluminum foil shiny side down. Cook this for about 60min covered plus 20 min uncovered in a preheated 375deg oven. We will get back to this in a few minutes
  17. Now for the Bacon Wrapped Chicken Legs
  18. Right after you place the Scalloped Taters in the oven to cook you need to prep your chicken legs this is how it goes.
  19. Wrap each leg in a strip of bacon (hard I know use tooth picks to hold if need be)
  20. Mix up the BBQ sauce concoction and get ba BBQ sauce brush.
  21. Now apply liberally to the legs and let it sit
  22. Cook in Oven at 375deg for about 35 to 45min

  24. Set your timer for 40min for the taters when that is done make room for the chicken add that set timer for 20 min when that is done remove the foil from taters and cook final 20min then every thing should come out of oven at same time.
